Complex, rich aromas of dark chocolate, plum and spice compliment the
dense palate of fresh blackberry, star anise, and white pepper flavours.
A powerful but seamlessly balanced cool-climate Shiraz with lingering,
leathery tannins. A benchmark of Adelaide Hills Shiraz with the ability to
cellar for over 15 years.
Yielded at 7mt per ha. Wild-yeast fermented. Partial whole-bunch, wholeberry, extended maceration. French oak 300L puncheons and 500L hogshead for 18 months. 35% new. Barrel selection prior to bottling at the estate
